I did a REGEDIT and did a search for an oddball resolution that was listed and supported by the ATI card so I could find out where they were kept.
For example, 1152x864. I typed in "1152" and it lead me to here:
HKEY_LOCAL_MACHINE\SOFTWARE\ATI Technologies\Desktop\ResModeSettings\Display1\1152 x 864
It was under DISPLAY1 where I found the settings.
I would highly recommend that you backup the registry / do a disk image / set a restore point / etc. before doing any of the changes / deletions of those resolutions.

BTW, there is a program called MULTIRES that is free and is like the old QUICKRES feature from Win 98 SE. You can use it to quickly change resolutions and color depths, and you can opt to only have the resolutions you want listed there.
It might be a better thing to try than messing with the reg.
