New Build - Need some opionons on a couple of parts

Okay to start off, budget is around $1200 cdn, I don't OC, and I play games occasionally (just waiting for UT 3 and Starcraft 2..if ever it comes out)

Anywho this is what I got so far:

CPU: E6750
Vid: eVGA 8800 GTS 320MB (is it worth getting the OC'ed version?)
HDD: Segate 7200.10 320GB
Case: Antec P182

Okay now things I still need:

Motherboard: I think I would like the new P35 chipset, I saw the roundup by driverheaven, but those are a little pricey, I was thinking something around $150, maybe the MSI P35 Neo 2-FR, or the Asus P5K...again I don't OC just want something reliable and stable...

RAM: There are wayy too many RAM's, its confusing. Is it better to get faster RAM, or better timings RAM? Not too picky, just want something that won't fail on me

PSU: All the PSU i've baught in the past have been included with the case, so I don't have a clue about which one to get...

System Specs

Get Asus P5K for mobo.
For RAM better timings are better in my book. And get 2Gb dualchannel kit of 800Mhz DDR2.
PSU: Seasonic M12 600W is good. But there are other as good or better PSU's in the market.

System Specs

better chips..... they are the priority for RAM, Micron D9 chips are the thing to get, Crucial 1066mhz sticks have them. they have pretty high timings 5-5-5-15 2T timings but they can get cranked down all the way to 4-4-3-9 timings at 1066mhz..... very nice chips
