Settlers 3

I recently got ahold of settlers 3. I am am very addicted to it. But I was searching for a faq or something because im am confused about some things, and i cant find a faq! If any1 has plaed the game could u answer some questions or direct me to a faq that does plz? thx. Here are the things im confused about:

1. My wineries don't produce wine for some reason.
2. What do donkey farms, charcoal makers huts, and small temples do?
3. How come the computer AI seems to be running around with upgrade/more highly decorated units? Is there a way for me to upgrade mine?
